If you're looking for a clean, bright brew that can serve multiple people, look no further than the classic Chemex. Although you can brew any roast in a Chemex, we recommend trying light to medium roasted single origin coffees to highlight delicate origin notes and bring out fruity, floral flavors. This guide provides instructions for brewing a Chemex 6-cup .
Step-by-step Instructions:
- Grind your favorite Swing's beans on a medium-coarse setting.
- Wet the paper filter with hot water.
- Discard the excess water. Place all 37.5 grams of freshly ground coffee in the damp paper filter.
- Start timer and add 80g of water to the filter cup. This first pour is called the bloom, and activates the CO2 gas trapped within the coffee.
- After 45 seconds, pour to 200g of water in a slow, circular motion to ensure all grounds are saturated.
- Allow all of the water to pass through, and then pour in the same motion to 350g.
- Repeat step 6 to 600g.
- You should finish your last pour at around 4:45.
- Let the coffee finish brewing until you are left with only the damp grounds. Serve and enjoy!
Expert Tips:
- When pouring the hot water, ensure that the circular motion integrates any coffee on the edges of the filter. The final product should leave you with clean filter edges and a flat bed of ground coffee.
